STRAWBERRY MUFFINS 🍓 Now that strawberry season is in full effect it’s only right I share my favorite strawberry recipe. Last summer you all flipped for it telling me these were your favorite muffins ever **happy dance** If you haven’t tried these yet im not sure what you’re waiting for?!?🤗🤍✨ STRAWBERRY MUFFINS 🍓 Ingredients: ✔️1 ½ C Chopped Strawberries ✔️1 ½ C GF, Whole Wheat Flour or All Purpose Flour ✔️¼ C Flaxseed Meal ✔️4 T Unsalted Butter ✔️1 C Plain Greek Yogurt ✔️½ C Maple Syrup ✔️2 Eggs ✔️¼ C Milk ✔️1 tsp Vanilla Extract ✔️1 tsp Baking Powder ✔️½ tsp Baking Soda ✔️½ tsp Salt Directions: 1. Preheat oven to 375°F. Insert cupcake liners into a standard sized 12-cup muffin tin. 2. In a bowl, place diced strawberries and a ¼ C of your flour. Lighting toss, coating the strawberries and set aside. 3. In a large bowl, combine melted butter, yogurt, maple syrup, eggs, milk and vanilla. Whisk to combine. 4. Add baking powder, baking soda, salt, flaxseed meal and left over 1 ¼ C flour. Whisk to combine. 5. Once the batter is fully combined, gently fold in the flour coated strawberries. 6. Evenly distribute batter into muffin tin, filling up each cup until the batter has run out. These muffins will have nice big muffin tops, don’t worry about over-filling. 7. Bake for about 20 minutes or until a toothpick can be inserted and comes out clean. 8. Let cool & enjoy!! **Can be stored for 3 days at room temp in an airtight container lined with paper towel or frozen for up to two months :)

Grandma’s Famous Egg Salad 😋 Looking forward to family brunch, bagels and my Grandma’s Egg Salad was a way of life growing up. It’s the dish that made me fall in love with Sunday Brunch at a young age. Now it’s my go-to when I’ve got eggs on hand, need a quick meal on hand or just want a change! I hope you enjoy it as much as I do. Recipes below 🤗🤍✨ Grandma’s Famous Egg Salad 💛 Ingredients ✔️6 Eggs (the “older” the eggs, the better) ✔️1 Tablespoon Mayo (vegan or regular) ✔️1-2 Teaspoons Dijon Mustard ✔️1 Tablespoon Fresh Dill, Minced ✔️2 Teaspoons Chives, Minced ✔️Salt & Pepper TT (to taste) Directions 1. Place eggs in a pot and add enough water to just cover the eggs. 2. Bring the pot to a boil over high heat. 3. Once the water is boiling, cover and turn off the heat but keep the pot on the hot burner. 4. Let the pot sit for 10 minutes and then transfer eggs to an ice bath. 5. Once the eggs have cooled, peel and place in a medium sized bowl. 6. Using a fork mash the eggs up until you’ve reached your desired texture. Add the rest of the ingredients to the bowl, mix, taste test a bit and ENJOY!! *My grandma tends to go heavy on the dijon, dill and black pepper! In all honesty I haven’t always been a breakfast person and I’m not usually a smoothie person, but sometimes it’s the perfect solution. When I don’t know what to eat in the morning or just need to have something quick, a smoothie is the perfect option. This smoothie has become my absolute go-to. I hope you enjoy it as much as I do!! 🤗🤍✨ Greenie 💚 Ingredients ✔️1 Banana 🍌 ✔️1/2 C Pineapple 🍍 or Mango 🥭 ✔️1 C Almond Milk 🥛 (or any liquid of choice...coconut milk, coconut water, water, etc.) ✔️1 C Spinach 🌱 ✔️2 T Flax Seeds & Hemp Hearts (protein! I haven’t found a protein powder that I love so I’ve been using seeds instead) ✔️Squeeze of lemon juice🍋 (you won’t taste the lemon at all, the lemon juice makes it easier for your body to absorb the iron in the spinach) Directions 1. Combine all the ingredients in a blender and blend until your desired consistency is reached. 2. Pour into a glass and ENJOY!! **If you use frozen fruit you do not need to add ice! Once the smoothie is blended you can add ice as desired Whenever I start to notice my leftovers/veggies piling up in my refrigerator I take them out, chop them up, sauté them. I beat together a few eggs, some extra egg whites, fill a muffin tin with the veggies and eggs then bake!

BREAKFAST POTATOES 🥔 You know, those perfectly crispy, flavorful and just a little bit buttery potatoes you have at Sunday brunch?! Usually found served under a perfectly runny yolk?! Well, if you’re anything like me you’ve been missing them — BIG TIME! Well, I have news. I finally cracked the code to the best, most delicious and easy breakfast potatoes.
It’s as easy as chop, toss and bake! Recipe below, happy brunching 🤗🤍✨ Breakfast Potatoes Inspired by Ree Drummond Ingredients ✔️ 1 1/2 lb Potatoes (I use a petite medley), chopped into bite-size pieces ✔️ 1/2 lb Sweet Onions, chopped ✔️ 4 Cloves Garlic, Minced or Microplaned ✔️ 1 Bell Pepper, Chopped ✔️ 2 Tbsp. Butter, Melted ✔️ 1/2 Tsp. Cayenne Pepper ✔️ Salt & Pepper, To Taste Directions 1. Preheat oven to 425 degrees F and line a baking sheet with parchment paper. 2. Chop potatoes into bite-size pieces. Place into a bowl of ice water for 10 minutes. **This will help tp remove some of the starch resulting in crispier potatoes. 3. White potatoes are soaking, chop onions & peppers, mince garlic. 4. Once potatoes are done soaking, remove from water and pat dry. 5. In a large bowl toss together, potatoes, onions, peppers, butter, cayenne pepper, salt and pepper. 6. Evenly spread out onto baking sheet and place into oven. Bake for 30 minutes, shaking the tray to rotate the potatoes 2-3 times. 7. After 30 minutes has passed raise the oven temperature to 500 degrees F and bake for another 10 minutes or until desired crisp. 8. Remove from oven, let cook and ENJOY!! BAGELS 🥯 Now I don’t know about all of you but to me, a bagel isn’t complete without some good shmear, nova, tomato slices and sometimes a few extra veggies. Whether i’m home with family, sitting on the floor of my dorm room or out for brunch with friends my bagel looks exactly the same. Though, more recently my bagel has had a bit of a change. I know - BIG DEAL. Though this change was something I decided to do on my own. I have been opting for more high fiber, low carb bagels. The reason behind this change…I feel better. My body feels better when I choose less processed, more high fiber foods. That’s just me🤍Make em and let me know what you think! 🍓 OH MY GOSH‼️These muffins are unreal, when I say unreal I mean these muffins really are unreal. A good muffin is hard to find when your GF, and finding a healthy GF muffins that are really good - nearly impossible. Somehow I cracked the code. These gf muffins are so so yummy, easy and end up being the big bakery style muffin I was seriously missing 🤗 and clearly many of you are missing them too!! We all know the saying, "when life gives you lemons, make lemonade". On the days I'm not really feeling lemonade I make lemon poppyseed muffins, that works too, right?! Anyway, lemon poppyseed muffins have always been associated with happy memories for me so I wanted to find a recipe that made me happy too. This means the recipe has to be gluten free and refined sugar free. It's easy to find recipes online that check these two boxes but they often don't taste the way a lemon poppyseed muffin should :( So, with a little inspiration from some very talented recipe developers I was able to make a recipe that best fits my needs and tastes just right. Moist inside with a perfectly firm structure and just enough lemon to ring sweet! Make em’, post em’, enjoy them!!

Serves 6, 2 muffins per serving. For Journaling on the F-factor Diet: ~16g Carbohydrates, ~7g Fiber Bagels with all the fixings are definitely my favorite Sunday brunch meal. They smell like heaven, but being gluten free I have to be careful. While some GF bagels are delicious they are often filled with sugar and other ingredients so compensate for an otherwise not so yummy taste. @healthywithnedi ‘s bagels are the answer, they are gluten free and healthy 🥯Make em’ , enjoy em’ and LMK what you guys think of ‘em.
