More often than not people ask if it’s hard to maintain a gluten free diet, especially in college, and my answer is that having any type of allergy or eating restriction makes eating anywhere that isn’t home difficult. That’s just inevitable. Being gluten free in college, now that’s a challenge.
Before coming to school I hadn’t really thought about my every meal, actually I didn’t think about it at all which is weird because i’m such a foodie. About 3 weeks into school I realized I was in trouble; gummy bears and popcorn, while delicious and gluten free, is not exactly a healthy diet. Finding gluten free options in the dining hall isn’t difficult if you like baby carrots, dry grilled chicken and gluten-free bread (not toasted) for your every meal. Finding delicious and healthy food is the difficult part. We have a salad bar but in all honesty it’s not my go-to. Let’s just say old lettuce, garbanzo beans, shredded cheese and thick creamy dressing is not my cup of tea. Ordering in is always an option, and a pretty decent one at that but it gets expensive. My savior; Wegmans! Every week I either take a zipcar with my friends or Instacart my groceries and stock up my refrigerator with delicious, healthy and gluten-free food. I have experimented with different products and recipes, making up my own or working off someone else’s. To give you an idea of what i’m working with I have a microwave, magic bullet, panini press and mini waffle iron. For any of you who are gluten-free, hate your dining hall or are just plain sick of your food options stay tuned as I start to share my dorm room recipes!!
