WOW! What a crazy 10 days it has been. I am still having a hard time wrapping my mind around everything that is going on and has gone on in the last 8 days. With about 48 hours notice I had to pack up, what felt like my entire life, into boxes while taking midterms. Let me just tell you, that was not an easy feat.
For those who don’t know I am a current sophomore at Syracuse University majoring in Nutrition. Just last Monday I was taking my first of three midterms for the week. At the time they were the only thing standing between me and spring break. Then sh** hit the fan and everyone started running around like chickens with their heads cut off. I was not only exhausted from a long two weeks of midterms, but I was under the duress of not knowing whether or not I would be returning to school after spring break. After talking with my family we decided together that I would pack up my entire room. I had to juggle emotions with school work and midterms. 14 boxes, 6 midterms, 3 airports and 2 flights later I am home. Now I am just doing what everyone else seems to be doing, trying to find a new normal. I am spending lots of time with my family, cooking/baking, staying active and finding random projects along the way to do. I am looking for all of the silver linings -- having more time with family, more time to read, to recipe test and to work on “those things i’ll eventually get to”. How are all of you staying busy and passing the time? Any recipe suggestions? Let me know! Stay healthy <3 XOX, Sophie Paige
